Angel Hair Pasta with Lemon and Garlic

| Amount | Measure | Ingredient - Preparation Method |
| 1 | tsp | olive oil |
| 2 | cloves | garlic - peeled and minced |
| 1/2 | cup | dry white wine |
| 1/4 | cup | fresh squeezed lemon juice |
| 1 | med | tomato - chopped |
| 8 | oz | dried angel hair pasta |
| 1/4 | cup | fresh basil - chopped |
| 2 + | tbsp | freshly grated Parmesan cheese |
| black pepper to taste |
Bring a large pot of water to a boil and maintain at a boil.
Saute garlic in olive oil in a medium saute pan, just until garlic begins to brown. Remove the pan from the heat, and pour in the wine. Return pan to heat and cook another 1 - 2 minutes, until the liquid has been reduced by half. Stir in the lemon juice and chopped tomato. Remove pan from the heat.
Cook pasta in boiling water 30 seconds to 1 minute. Drain and put into a warm serving bowl. Add basil, Parmesan cheese, pepper and tomato mixture. Toss and serve immediately.

| 1 1/2 | cups | chopped onion |
| 3 | cans | beef consomme |
| 1 | can | sliced mushrooms |
Melt butter. Stir in onions and cook until clear. Add rice and stir until brown. Add consomme and mushrooms. Bake, uncovered, in 2-quart casserole for one hour at 350 degrees.

| 2 | lbs | boneless chicken thighs - finely chopped |
| 3 | cloves | garlic - crushed |
| 1/4 | cup | vegetable oil |
| 2 | tbsp | flour |
| 1 | cup | dried onions |
| 3/4 | cup | green pepper - diced |
| 1/3 | cup | minced parsley |
| 2 | tsp | salt |
| 1 1/2 | tsp | coarsely ground black pepper |
| pinch | cayenne pepper | |
| 3 | cups | cooked rice |
Saute garlic in oil over medium heat in large skillet until soft. Remove garlic and discard. Add chopped chicken to oil. Cook and stir until browned. Sprinkle in flour, stirring well . Cook 2 minutes while stirring. Add onions, green pepper and parsley. Cook and stir. When onions begin to get limp, about 4 minutes add salt, black pepper, cayenne pepper and 5-6 tablespoons of water. Simmer about 3 minutes, adding more water if necessary to keep from burning.
Combine contents of skillet with rice. Mix well.
Serving Ideas : Serve with barbequed ribs or pork, greens and/or coleslaw, red or black beans and baked yams.

| 1 | sm bag | radishes - sliced thin |
| 1 | lb | bacon - fried and crumbled |
Cook Rice-A-Roni according package directions. Just before serving add remaining ingredients and blend.
