| 2 | lbs | catfish or snapper fillets |
| 1 | egg - beaten | |
| 1/2 | cup | Italian seasoned bread crumbs |
| 1/4 | cup | butter or margarine - melted |
| 1 | tbsp | lemon juice |
Dip fillets into egg; lightly coat with bread. Arrange fish in a single layer over a well greased, shallow baking dish. Combine butter and lemon juice, drizzle over fish. Bake at 400 degrees for 15 to 18 minutes or until fish flakes easily when tested with a fork.

| 1 | tsp | grated lemon rind |

| 4 | 5oz | flounder fillets |
| 3 | tbsp | butter - melted |
| 3/4 | tsp | fresh dill weed |

| 1/4 | cup | crab meat |
Saute celery and onion in 1/3 cup butter in medium skillet until tender. Remove from heat. Stir in stuffing mix, parsley, lemon juice, lemon rind, salt, pepper and crabmeat.
Cut fish filets in equal sections. Arrange sections in a lightly greased baking dish. Spoon stuffing mixture onto fish in dish. Top with remaining fish; secure ends with toothpicks. Drizzle with mixture of 3 tablespoons butter and dill weed. Sprinkle with paprika. Top with lemon slices.
Bake at 350 degrees for 25 - 30 minutes or until fish flakes easily.
Serving Ideas : Baked filets may be arranged on small platter with hard-boiled eggs sliced lengthways in quarters on a bed of lettuce or other greens.
NOTES : This recipe may be doubled. A Howard family favorite - worth the time and effort!
